A new restaurant will take residence on Chancellor Drive in Bloomington, and it promises to be ‘egg-ceptional’.
Egg Republic will be moving into the 4,500 square foot space occupied by Café Italia Ristorante until 2018. The new venture will be owned and operated by Jack Pinjolli, who has 12 years of experience in restaurant business operations. Mr. Pinjolli currentlyoperates Jack’s Café in LeRoy, Illinois.
Extensive renovations will be done on the interior and exterior of the structure including kitchen improvements, walk-in coolers, parking, landscaping, and HVAC. Once complete the current plan will have Egg Republic running seven days a week for breakfast and lunch and will create 25 new jobs, 15 full-time and 10 part-time.
As a vacant property, the parcel of land generates approximately $16,800 in total property tax revenue. When the tract was in productive use it was generating approximately $24,100 in total property tax revenue. An increase that will benefit the Unit 5 School District, the City of Bloomington, and the other taxing bodies that maintain and increase the quality of life in the community.
Work is slated to begin on the property in summer 2022.
